OLIVE OIL SELECTIONS
New Release
Vigna, Olio
The Ascolano olive is at the heart of this Italian olive oil blend. A lesser-known varietal than its Tuscan counterparts, the Asoclano olive also has origins in Central Italy. It has a medium-bodied flavor profile, making its oil a wonderful offering for the home “tavola” or table. This Italian table blend has a delicate, rich and mildy grassy flavor profile, with just a hint of pungency. It is perfect for all of our dishes; add a bit of Italy to your table!
Usage Notes: This medium-bodied oil is incredibly versatile! The name Italian Tavola, or table, implies that it can be used liberally at the table with almost any foods! Try it as a toss for fresh pasta, a drizzle over antipasto or fresh vegetables, even as a topping for a soft cheese with a bit of cracked pepper. The delicate fruitiness of this oil pairs well with milder foods as well. Try it over chicken, fish, or even sushi! As it’s rich spice is not overwhelming, pair it with milder vinegars in dressings to allow the beauty of the oil to shine through.
Vigna, Olio
Usage Notes: What pairing isn’t improved with a little Garlic? From Italian to Asian cuisines, this oil will quickly become a staple in your kitchen. The subtle garlic flavor is perfect for sautés, marinades, or just tossing over vegetables, roasts, or pasta. Add some hearty bread and dip – the meal is done!
2022 Sonoma County Harvest Fair Awards – Gold
The Three Orchards Blend combines olives of the highest quality from three different orchards in Northern California. This smooth, buttery olive oil exhibits flavors of herbs, almonds, and green bananas with a slight peppery pungency on the finish. This is our most versatile culinary oil, and we believe you will find Three Orchards Blend an excellent complement to all of your culinary needs!
Usage Notes: Enjoy drizzled over cherry tomato Caprese, slow-cooked salmon with harissa, greens, and beans; with crusty bread or with fried eggs and pancetta over Brioche. With the Fall season approaching, use in soups.
Terra, Olio
New Release!
Originating in Greece, the Koroneiki olive is primarily used in olive oil production.Grown often in high-density orchards, this small olive delivers a bold flavor and healthy boost of polyphenols, or anti-oxidants. This oil has an aroma of ripe banana, and an olive flavor offset by subtle notes of fresh grass and a bold, peppery finish. Enjoy this taste of Greece!
Usage Notes: As Koroneiki is a rather bold oil, it pairs well with more robust foods. Try it alone as a dip for hearty, crusty bread to start, and then venture into using it for marinades, bold salad dressings (it is a great match for a strong vinegar) or a plain drizzle on arugula salad. Want to add punch to your pesto? Try using this oil instead of a mild one! It’s bold, grassy flavor is a wonderful addition to sautéed vegetables, tomatoes or roasted meats.
Oliva
Year-round Favorite
Usage Notes: Bold and beautiful, it is fantastic in marinades, dressings, BBQ glaze, and drizzled-over brownies! It’s one of our staff favorites year-round for bread dipping or so many cheeses to add sophistication to your appetizer, charcuterie board and just about any meal.
